Spinach and Sundried Tomatoes Quiche without Pie Shell



My husband enjoyed this dish a lot. He can eat this quiche for breakfast, lunch, or dinner. I hope you will enjoy it too.

Spinach and Sundried Tomatoes Quiche without Pie Shell

6 eggs
1/3 cup heavy whipping cream
1/2 cup diced onion
2 tbsp butter
1 pack (16oz) chopped spinach
1 cup sun dried tomatoes in olive oil
1 cup Mozzarella cheese
1/4 cup Mexican cheese

Preheat the oven to 375 Fahrenheit. Put the butter and onion in a baking dish, bake for 2-3 min, and stir well. Put the eggs and heavy whipping cream in a mixing bowl and mix. Pour the egg mixture into the baking dish on top of the onions. Stir in spinach, sun dried tomatoes, and cheese. Bake until a toothpick comes out clean. Serve with salad.

Oh my gosh...I am so making this. This looks divine and I love sundried tomatoes and always looking for new ways to make them.
