Chicken Coconut Milk Soup


I just made this dish, Chicken Coconut Milk Soup, tonight. This dish is again one of my husband favorite dish. I hope you will enjoy it.



Chicken Coconut Milk Soup

1 cup chicken (cut small pieces)
13.5oz Can of light coconunt milk
2-3 pcs fresh or dried galangal slices
2 pcs of fresh lemon grass stalks
1 clove of garlic
3-4 Tbsp. lime or lemon juice
1-2 lime leaves
1/2 tsp. sugar
3-4 Fresh chilis (If you like spicy, Optional)
Fish sauce or thin soysauce to taste
fresh cilantro leaves


Cut chicken into small pieces. Put coconut milk, galangal, lemon grass, garlic in a pot. Bring to the boil; this will bring out the flavor. Add chicken, fish sauce or thin soysauce, lime juice, lime leaves and if desired put Thai fresh chiles. Bring to the boil for one or two more minute. Remove from heat and garnish with fresh cilantro leaves. Serve as a soup or serve with rice.
