Vegetarian Fried Rice





1 cup cooked rice
2 shiitake mushrooms (soaked in water)
1/4 cup edamame (soy beans)
1/4 cup carrot (cut into little square)
1/2 cup tofu (cut into square)
1 egg (optional)
1 tsp sugar
2-3 tbsp soy sauce
2 tbsp vegetable oil

Put shiitake mushrooms in the water until it is soft and slice it thinly. Heat the oil in a pan over medium high heat then add egg, mushroom, tofu, soy beans and carrot. Stir fry. Add rice. Stir fry well. Add sugar and soy sauce. Stir fry until it is cooked. Taste and remove from the heat. Serve.
*** Chicken or pork can be substituted for the tofu, any vegetable.
